Spinach Balls

2 10 ounce packages frozen chopped spinach
2 cups herbed stuffing mix
1 cup parmesan cheese (5 ounces)
1/2 cup melted butter
4 green onions
3 eggs
dash of nutmeg

Mix together and form teaspoon size balls. Place on cookie sheet.

Bake at 350 degrees for 20 min

 

Mustard sauce:

1 / 2 C dry mustard
1 / 2 C white vinegar
mix and let stand 4 hours

1 / 4 C sugar
1 egg yolk

Mix together and stir over low heat until it thickens
