Potato Cheese Soup
1 lb of potatos
2 onions
4tbps. Margerine
1 /2 C flour
1 egg (beaten)
1 C milk
salt and pepper
1 cup chopped spinach
1 cup grated cheese
Clean potatoes and dice. Put the potatoes in a pot and cover with cold water. Put on high heat and boil uncovered until barely soft (do not overcook). Add chopped spinach to the boiling potatoes. Turn off stove and cover. Do not drain. Sautee onions in margarine over medium heat, until clear. Remove from heat and mix in the flour to make a crumbly mixture, then add egg and mix well. Add the milk slowly to the mixture, stir well, then add it to the potatoes, stirring constantly. Bring to a boil. Add the cheese and cook until cheese is melted.
