Gefilte Fish
2 pounds fresh salmon without skin or bones
2 eggs
1 large onion, peeled, ends removed, chopped
1 teaspoon salt
pinch of black pepper
1 teaspoon sugar
3 tablespoons matzo meal
6 cups water mixed with 1 tsp. salt
place salmon in food processor with steel blade and pulse until coarsely chopped but not too smooth
add eggs, onion, salt, pepper, sugar, matzo meal process until the mixture is well combined. put in bowl and chill for 30 minutes place water mixed with salt into large saucepan and bring to a boil, reduce to simmer with wet hands form 2 to3 tablespoons of the mixture into elongated egg shaped patties, place the patties in the simmering liquid and cook 20-30 minutes removed and chill pour 1-2 cups of the cooking liquid into the contairner and cover
