Chocolate Fudge Cake
Cake:
12 oz semi sweet chocolate
5 T strong coffee (espresso)
1 cup butter
2 cups sugar
6 egg yolks
1 cup flour
6 egg whites
Frosting:
4 oz chocolate
2 oz butter
Preheat oven to 350
Melt chocolate and espresso in double boiler
Cream butter and sugar
Add egg yolks one at a time to butter/suar mix
Add flour
Beat egg whites until stiff then add to chocolate mixture
Pour into 9" greased spring form pan
Bake 60-70 minutes
Top will be cracked, and middle will be moist
Let cool.
Glaze:
melt 4 oz of chocolate and 2oz butter and pour over cake
