Bulgur and flax pilaf
2 T butter
1 C bulgar wheat
1 / 4 C flax seed
1/3 minced onion
1 small tomato
2 cups chicken broth
1 / 2 tsp. salt
1 / 4 tsp. Italian seasoning
In medium saucepan, melt butter over medium heat. Add bulgar, flaxseed and onion. Stir until bulgur is golden brown, about 3 minutes. Stir in tomato, chicken broth, salt and Italian seasoning. Cover, bring to a boil and lower heat and simmer approximately 15 minutes or until all the broth is absorbed. Fluff pilaf with fork. Let stand 10 minutes before serving.
