Banana Cake with Cream Cheese Frosting
2 sticks of butter
1 cup sugar
2 eggs
1 cup mashed ripe bananas
1 3/4 white flour
1/2 tsp. salt
2/3 tsp. baking soda
5 Tbsp. buttermilk
1 tsp. vanilla
Preheat oven to 350.
grease and flour 2 9-inch layer pans
cream butter and sugar together until light and fluffy
add eggs one at a time beating well after each
add mashed bananas mixing well
sift dry ingredients and add to butter mixture
stir until flour has been incorporated completely
add buttermilk and vanilla, mix for 1 minute
put in pans and bake 25 minutes or until cake tester comes out clean
cool for 10 minutes on a rack, then remove and cool for 2 hours
Cream Cheese Frosting
8 ounces cream cheese (room temp)
6 tablespoons butter (room temp)
3 cups confectioners sugar
1 tsp. vanilla
juice of 1/2 lemon (optional)
cream together cream cheese and butter
slowly add sifter confectioner sugar
mixture should be lump free
add lemon juice and vanilla, mix again
To get fancy, place sliced bananas in the middle of the two layers, and
crushed walnuts on the top.
